Salmon, Zucchini & Herb Fritters with Roasted Pepper Mayo


Lots of gorgeous flavours in these ones! We used parsley, thyme and sage as our choice of herbs.

Tip: We used the fresh Huon Wood Roasted Salmon available from leading supermarkets in these but any salmon will work.

Hint: Our macros include all of the coconut oil which you need to ensure crispy fritters but not all of it will actually be used.

1 small garlic clove, crushed
1 medium zucchini, grated (150g)
1 long green shallot/scallion, slice
1 tablespoon of chopped fresh herbs of choice
1/3 cup of chickpea (besan) flour
1/3 cup of water
1/4 teaspoon of sea salt
75 grams of wood roasted salmon, broken in small pieces
1 tablespoon of cold pressed coconut oil

Roasted Pepper Mayo

2 tablespoons of whole egg mayonnaise*
1/2 garlic clove, crushed
2 tablespoons of roasted red peppers in oil, drained

Method

  1. Heat coconut oil in medium sized pan and saute onion for 1 minute, add garlic and cook for 1 minute more.
  2. Place in a bowl with zucchini, shallots, flour, water, herbs and salt. Mix well then gently stir in the salmon. Leave to sit and allow the flour to absorb the liquids.
  3. Place all mayo ingredients in a stick blender jug or small food processor bowl and blend until smooth. Set aside.
  4. Heat remaining oil in the pan to medium and place mixture in pan, forming into two fritters. Cook until the tops dry out and the bottom is brown and crispy, around 5 minutes, flip and cook on other side for another 2-3 minutes or until nicely browned.
  5. Serve fritters with the red pepper mayo and some leafy greens.
*We love to make our own mayonnaise but if you are using store bought choose organic whole egg with no added sugar. The macros are worked on our recipe and you can find it in the Dressings and Sauces section
