Sweet Potato Noodles with Egg


Quick, simple and delicious! You can cook the egg any way you like and use your favourite herbs.

Tip: We used a shark style vegetable peeler to make the noodles.

Ingredients

1 teaspoon of cold pressed coconut oil or grass fed ghee
1 cup of sweet potato noodles (around half a small sweet potato 150g)
1 teaspoon of finely minced fresh rosemary or other herbs of choice
1 small long green shallot/scallion, sliced
sea salt & cracked pepper to taste

Method

  1. Heat the oil or ghee in a small pan to medium high and cook noodles, rosemary and shallots for a couple of minutes until sweet potato is softened. Remove to a plate and keep warm.
  2. Fry the egg in the same pan or alternatively you could use a second pan or a larger pan and cook both at the same time. Serve the egg on top of the sweet potato noodles.
