Paleo Fritters with Tzatziki


Fritters bring back memories of childhood and usually made with wheat flour and deep-fried. These fritters are definitely healthy, and you could even leave out the meat and add extra veggies for a vegetarian version.

Ingredients

1 tablespoon plus 1 teaspoon coconut flour
1 tablespoon plus 1 teaspoon arrowroot or tapioca flour
1/4 teaspoon of sea salt
1 pinch of fresh cracked black pepper
1 egg
1 1/2 teaspoons of cold pressed coconut oil, melted
3 tablespoons of water
50 grams of diced corned silverside or other cold meat
1 small long green shallot/scallion
1 tablespoon of cold pressed coconut oil for frying

Tzatziki Sauce

1/4 small cucumber, seeds removed and diced
1/8 red onion (12g) diced
6 capers, chopped (optional)
1 sprig of fresh dill or 1/4 teaspoon, dried
1 tablespoon of unsweetened coconut yoghurt
1/2 teaspoon of fresh lemon juice
sea salt & cracked pepper to taste

Method

  1. Blend flours, salt and pepper together in a small bowl. In a separate bowl whisk egg, melted oil and water.
  2. Blend flour and egg mixtures together until you have a smooth batter. Stir through meat and spring onions. Let sit for 2 minutes to let the coconut flour absorb some moisture.
  3. Meanwhile mix all tzatziki ingredients in a small bowl and set aside.
  4. Heat a pan to medium high and add just enough coconut oil to cover the base.
  5. Place mixture in oil in 3 separate piles, shaping into fritters. Cook for approx. 5 minutes then carefully turn over and fry until golden brown.
  6. Remove from the pan and drain on paper towel. Season with salt and serve with Tzatziki Sauce.
