Steamed Salmon and Greens with Asian Dressing


Simple, light and delicious. The flavours in this dish complement the salmon so beautifully.

Tip: You can use whatever vegetables you like, keeping in mind if you do so then the macros will change.

Ingredients

1 baby bok choy or pak choy, halved
2 asparagus spears
2 stems of broccolini
120 grams of salmon fillet, skin off
1/2 teaspoon of sesame seeds
1 long green shallot/scallion, green part only

Dressing

1/2 small garlic clove, crushed
1/2 teaspoon of fresh grated ginger
1 teaspoon of coconut aminos
1 teaspoon of rice wine vinegar
1 teaspoon of extra virgin olive oil
1/4 teaspoon of sesame oil
1/4 teaspoon of pure honey
1/4 teaspoon of water

Method

  1. Place the 2 halves of the bok choy in the bottom of a steamer basket and place asparagus and broccolini either side
  2. Lay the salmon on top of the vegetables and place the steamer basket over a pan of simmering water, cover and cook for 7-8 minutes.
  3. While salmon is steaming heat a small dry pan to medium high and place sesame seeds in, toast until fragrant and lightly browned.
  4. Place all dressing ingredients in a small jar and shake vigorously until well blended and set aside.
  5. Once Salmon is cooked, warm the dressing a little then place Salmon on a plate with the greens, drizzle dressing over the top and sprinkle with sesame seeds and shallot greens.
