Chilli Chicken and Cauliflower Soup


So much flavour in one bowl of soup! It's creamy, spicy and so very delicious.

TIP: You can use coconut cream in place of the yoghurt but we think it adds to the flavour.

Ingredients

1 cup of chicken bone broth
1 tablespoon of full fat coconut milk
1 tablespoon of unsweetened coconut yoghurt
1 tablespoon of fresh lime juice
1 teaspoon of fish sauce
1/2 teaspoon of ground chilli powder
1 pinch paprika
1 small pinch ground turmeric
1 small pinch cayenne pepper
1 small pinch ground cumin
1/4 long red chilli, sliced
1/2 teaspoon of sea salt
1/2 teaspoon of coconut sugar
100 grams of cauliflower florets
125 grams of chicken thigh fillet, diced
1/2 long green shallot/scallion
1 teaspoon of chopped coriander
1/4 lime, to serve (optional)

Method

  1. Combine the broth, milk and yoghurt in a medium sized saucepan over medium high heat. Stir in chilli, lime juice, fish sauce and spices, then add cauliflower.
  2. Bring to the boil then cover and cook for 10 minutes. Add chicken and shallots and simmer for 15 minutes more. Stir in half of the fresh coriander, adjust seasoning to taste.
  3. Serve topped with the rest of the coriander and the lime wedge.
