Sweet Smoky Salmon with Strawberry Salsa


The combination of coconut sugar, chilli and paprika on the salmon and the salsa of strawberries, jalapenos, red onion, coriander and lime juice is a flavour explosion! So very delicious!!!

120 grams of fresh salmon fillet, skin off
2 teaspoons of coconut sugar
1/8 teaspoon of ground paprika
1/8 teaspoon of dried chilli powder
1 pinch of sea salt

Salsa

1/2 cup of diced fresh strawberries (75g)
1/2 jalapeno, diced (18g)
1/4 small red onion (25g) diced
2 teaspoons of chopped fresh coriander
1/2 teaspoon of lime juice
1 pinch of sea salt
cracked pepper to taste

Method

  1. Preheat oven to 180°C
  2. Pat the salmon dry and place on a lined oven tray. 
  3. In a small bowl mix sugar, chilli, paprika and salt and rub the mixture into the salmon. 
  4. Place in the oven and bake until done to your liking approximately 8-10 minutes.
  5. Meanwhile toss all salsa ingredients together. 
  6. When salmon is cooked place on a plate and serve topped with salsa.
We served this over shredded lettuce for a nice fresh addition.
