Paleo Almond Coconut Porridge


Missing oatmeal? You are going to love this creamy cereal, the perfect winter morning breakfast.
Our suggested topping is banana and cacao nibs but feel free to get adventurous and come up with your own.

Ingredients

2/3 cup of unsweetened almond milk
1/4 cup of blanched almond meal
1/3 cup of desiccated coconut (30g)
1 tablespoon of flaxseed meal (7g)
1 teaspoon of cold pressed coconut oil
1/4 teaspoon of vanilla extract
1 pinch of sea salt
1 teaspoon of pure maple syrup

Method

  1. Place all ingredients in a small saucepan over medium heat.
  2. Bring to a simmer, stirring frequently until you see it starting to thicken.
  3. Cook until it is the desired thickness then serve alone or with your choice of toppings.
